The artistic and cultural essence of early England and of middle Europe (Bohemia) is an integral part of both The Bohemian Hotel and of the Red Stag Grill concepts. The Hotel offers guests the experience of staying within a recreated historic bohemian guesthouse, with luxury accommodations unparalleled in the area, intuitive service, a fabulous art collection, and an authentic middle-European setting including hand carved millwork and other elaborate artistic detailing.
The Red Stag Grill, named after a type of deer indigenous to middle Europe, reflects a Germanic heritage. The fanciful logo was inspired by a crest on the facade of a castle in Bavaria. The space emanates relaxation, with hand-hewn beams, custom handmade wooden tables, subtle lighting, an intimate bar and cozy booths. The music, drama and vibrancy of the space sets the stage for wonderful local European-inspired comfort food.
The quality of the food and wine create the pop in the overall experience. The cuisine is a recreation of traditionally prepared European comfort food updated with local ingredients, such as mountain apples, venison, brook trout, coastal shrimp and North Carolina sweet potatoes. We have taken European family recipes such as slow cooked stews, fresh pies, paired with eclectic boutique wines and offer this in our comfortable, casual setting.
The Grill’s wine cave is tucked beside the bar, and houses a carefully selected collection of American and International wines. The ornate carved pair of doors at the far end of the restaurant leads to Red Stag’s private dining room, which showcases a custom live-edge wood dining table and is available for intimate events. Artwork from Kessler’s extensive personal collection adorns the walls.

Chef Hayes is known for integrating local ingredients and flavor into each creative dish. His featured items include skillet roasted mussels, beef goulash with spaetzle, grilled elk filet, and North Carolina smoked ruby trout dip. Chef Hayes comes to the Grand Bohemian Hotel most recently from his role as Chef de Cuisine at Print Works Bistro at the Proximity Hotel in Greensboro, NC.
